For many people, the roadblock to eating healthy comes down to convenience. When you’re hungry, it’s easy to reach for the closest and/or easiest option for food. Oftentimes this will lead to a “drive-thru” meal, or a pre-packaged meal— a sure sign you’re probably about to eat junk! One of the easiest ways to avoid this, is by planning ahead. If you get a few hours on the weekend, make a large batch of brown rice, and bake a few chicken breasts to keep on hand for the week. You then have access to an easy protein and healthy carb option to act as a canvas for a variety of food cravings. Feeling like Chinese food? You can add some broccoli and Teriyaki sauce to your chicken and rice. Feeling like Mexican food? Grab a fresh salsa (or make your own) and combine with 4 ounces of chicken breast and 1/2 cup brown rice. This is a picture of what it looks like when I prepare it at home, but normally I’ll bring this to work with me for lunch served in some dazzling Tupperware!
